This is a very delicious recipe my Oma always makes, its really good. Even the left over juice tastes awesome to drink, even tho it can be pretty sour.
I think this is a very refreshing salad and its perfect if you want to eat with some salmon and tortellini Alfredo, yummy!!!
Ingredients:
- 1 whole nappa cabbage (large one preferably)
- 1/4 cup fresh lemon juice (squeezed from a lemon) - I also like to throw the left over pulp from lemon in the salad too.
- 1/8 cup vegetable oil
- 1/2 cup sugar
- 1 tsp. pepper

- 1/8 cup vegetable oil
- 1/2 cup sugar
- 1 tsp. pepper
Directions:
1. Cut the "bitter" white part out of the bottom of the cabbage, I usually make a triangle shape with it...its okay if you leave some.
2. Once all the "bitter" parts are cut out fold or roll the cabbage and start slicing it (DO NOT USE A FOOD PROCESSOR it shreds it too much). You want long thing pieces of cabbage.
3. Once you start getting to the very inner part its easy to just cut the bottom piece off and start slicing from the top until you reach the "bitter" part.
4. Once all this is done throw it in a strainer and rinse the cabbage.
5. In a large bowl mix together everything except the cabbage. Taste to see if its to sour, if its too sour you need to add more sugar.
6. Once you've reached the desired taste of the juice throw in the cabbage and mix/coat well. The juice will sink to the bottom you will have to keep mixing it.
7. Chill until its ready to eat, the left over juice once the salad is all gone is good to drink too.
